SUKHI DAL Ingredients: 2 tablespoons vegetable oil 1 teaspoon cumin seeds ½ teaspoon asafoetida 4 cloves garlic, finely chopped 1 green chilli, finely chopped 1 teaspoon turmeric powder 1 onion, finely chopped 1 tomato, seeded and finely chopped 1 cup split white lentils (urad dal), soaked for 30 minutes Salt to taste 1 tablespoon finely chopped fresh coriander 1 one-inch piece ginger, peeled & cut into juliennes a few sprigs fresh cilantro 1 teaspoon lemon juice Method: 1. Heat oil in a frying pan over medium heat. Add cumin seeds, asafetida, garlic, green chilli and turmeric. 2. When garlic becomes fragrant, add onion and sauté till the onion is golden. Add tomatoes and mix well. Sauté till tomato softens. 3. Add soaked lentils, toss well and allow to cook for 4 to 5 minutes. Season with salt and fresh coriander. 4.
