Christmas means homemade goodness. Be it cookies, fudge, cakes, pastries, rolls, roasts, drinks, wine, brownies, chocolates etc. Baking tops the list. So why not start with an easy take on Christmas special ginger cookies that you can make & store for your tea time.
Makes- 12-15 cookies
Spiced flour mix-
2 & 1/4 cups refined flour (maida)
3/4 tsp ground cinnamon
1/2 tsp ground cloves
3/4 cup butter, softened
1 cup caster sugar
1/4 cup honey
1 tbsp curd
2 teaspoons ground ginger
In a bowl, sift and mix refined flour (maida), ground cinnamon, ground cloves and keep aside.
In another bowl, mix butter, caster sugar until light and fluffy.
Beat honey, curd & ground ginger one by one to the mixture.
Combine the spiced flour mix to the creamy mixture and mix well.
Make a cookie dough, cling wrap it and refrigerate till 15-20 mins or until set.
Roll into a sheet using butter paper.
Cut into the christmas cookie moulds.
Bake at 200 °C until puffy and lightly browned, 10-12 minutes.
Cool & serve with tea, milk or coffee.
